What is Cacao Butter?
Cacao butter is the natural fat extracted from the cacao bean — the same bean that gives us cocoa solids. Pale, creamy, and aromatic, it’s what makes chocolate silky, smooth, and satisfying to the bite.

Where Does It Come From?
At Anvers Tasmania, we work with single-origin and heirloom cacao from carefully selected farms, including the rare and prized Fortunato No. 4 variety, grown in the lush Marañón River Valley of Peru. These beans are grown with care, and we ensure that the same high standards apply when extracting their cacao butter — preserving the purity and provenance of every origin.
Cacao beans are first fermented, dried, roasted, and then ground into a rich, thick paste known as chocolate liquor (despite the name, it contains no alcohol). This paste is then pressed under high pressure to separate the pure, golden cacao butter from the dense cocoa solids. It’s this natural cacao butter that is later recombined with select cocoa mass and sugar to create the smooth, high-quality chocolate we know and love — including our own couverture chocolate at Anvers.
Why Cacao Butter Matters To Anvers
We never use substitutes like vegetable fats. Only pure cacao butter gives chocolate the perfect snap, sheen, and melt that premium couverture is known for. It’s also essential to tempering — the precise process of aligning cocoa crystals for a flawless finish.
